We recommend roasting tomatillos on a sheet pan till lightly browned on each side with onion, garlic, and jalapenos, then throwing the roasted vegetables in the blender with a good pinch of salt and a bunch of cilantro. Finish with lime juice for freshness and flavor, and boom! The perfect salsa. Also makes an excellent enchilada sauce!
