The farmer's favorite. This bulbous stem is crisp and full of water when eaten raw. Great for a hydrating snack on its own or with dips. A member of the brassica family, this vegetable resembles its relative, broccoli, in its sweetness and crunch and transformation when roasted. Also excellent in a gratin.
