garlic scapes

The gourmand’s favorite! Before garlic plants blossom, they shoot out a curly green flower stalk, the scape, that must be removed in order for the plant to bulb. Turns out that stalk is also delicious: juicy, firm, and full of a delicate garlic flavor that makes for a great garnish, pesto, chili oil flavoring, or any way you might use garlic or green onion. Unlike their counterpart, green garlic, they can stand up to high heat and still deliver flavor. Scapes are around for a very limited window of time, so get yours before they’re gone!
